Everybody loves a good chocolate chip cookie but our health doesn’t necessarily love what is in a cookie. So I took one of our favorite recipes and put a few healthy twists on it.  You can take it one step further and sub out the butter, use different types of flour and add oats if you want to experiment.  But for now, here is a recipe that I tweaked…most specifically the sugar, oil and type of chocolate chips.

INGREDIENTS

  • 1 1/2 cups flour (I used King Arthur this time but I am going to try Oat Flour next time – you simply grind up oats in a food processor…if you use oat flour, you will probably have to add more liquid)
  • 1 tsp baking soda
  • 1 stick unsalted butter (I am going to try to substitute apple sauce next time)
  • 1/4 coconut oil
  • 1 1/4 organic cane sugar
  • 1 teaspoon vanilla extract
  • 2 large organic farm fresh eggs
  • 1 1/2 cups Unreal Candy (I bought them at Whole Foods)

DIRECTIONS

  • Preheat oven to 350
  • Beat butter, oil & sugar in a bowl with a mixer on medium speed until creamy, about 5 minutes.  (Use paddle attachment)
  • Beat in Vanilla
  • With the mixer on low, beat in eggs one at a time
  • Add flour & baking soda & beat until just combined
  • Stir in candy
  • With an ice-cream scooper, scoop batter onto cookie sheets lined with parchment paper
  • Bake for 15 min and check – might need to bake for 5 more minutes
  • ENJOY!
