Ingredients:

Sweet Potatoes ( 1 potato per person)

Rotisserie Chicken

BBQ Sauce (homemade or look for an all natural, few ingredient, low sodium store brand sauce)

Asparagus

Olive Oil

Kosher salt

Optional:  cheddar cheese

 

Directions:

(1)  bake sweet potatoes at 400 degrees until a knife can easily poke through (approx 45 min)

(2) place asparagus in a glass dish, drizzle with olive oil and a dash of kosher salt to taste and roast for approx 12 -15 min

(3)  cut up rotisserie chicken and stir with BBQ sauce

(4)  top each baked sweet potato with chicken mixture and serve with asparagus.  Top chicken with graded cheese if desired.
