From kids to adults, these Pumpkin Spice Pops will be a hit!  Perfect for after school snacks, your fall tailgate or Halloween classroom party!

 

INGREDIENTS:

2 ounces cream cheese

2 tablespoons confectioners sugar

1/3 cup pumpkin puree

1 3/4 cups combo of graham cracker crumbs and oats (can add graham crackers and oats to a food processor and pulse to combine for a creamier texture)

1/2 teaspoon pumpkin pie spice (optional)

1/2 teaspoon ground cinnamon

4 ounces melted chocolate chips (look for a higher cacao content)

 

COATING:

10 ounces chocolate chips

 

ADDITIONAL ITEMS:

Lollipop sticks

sprinkles

 

DIRECTIONS:

  • Beat cream cheese and sugar together in a stand mixer fitted with a paddle attachment until creamy
  • Add pumpkin and beat till combined
  • Add graham cracker/oat combo, pumpkin pie spice and cinnamon and melted chocolate
  • Beat until everything mixed
  • Cover and refrigerate 1 hour
  • Line a large baking sheet with wax paper/parchment paper
  • Using an ice cream scooper (or 2 spoons) scoop mixture into balls and place on lined baking sheet
  • Chill 30 min
  • Melt chocolate in microwave safe bowl
  • Using a spoon, dip balls into chocolate to coat, then stick with lollipop stick
  • Place pops in a cake pop stand OR back on lined baking sheet
  • Refrigerate until chocolate has hardened
