These healthy treats are perfect for your Halloween party or any day for that matter!  Loaded with carrots and extra cinnamon, these mummy munchkins are sure to be a hit!

You can use a cake pop mold and make munchkin donuts or use a donut pan.  Don’t have either, just use a loaf pan.

INGREDIENTS:

Wet Ingredients

1 medium banana, mashed

2 large eggs

1/4 plain greek yogurt

1 teaspoon plain vanilla extract

1/2 cup milk (regular or almond)

1/2 cup maple syrup

Dry Ingredients

1 1/2 cups flour

1/2 teaspoon baking powder

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1 1/2 cups grated carrots

1/2 cup chocolate chips

Optional Add In’s

raisins, nuts &/or seeds

Directions

Heat oven to 350 and lightly spray molds.

In a large bowl, mix all wet ingredients.  Stir to combine.  In another bowl, mix all dry ingredients.  (Or take the #shortcutcook way and just add all dry ingredients to wet ingredients)  Stir to combine.  Using an ice cream scooper, scoop batter into molds.  Bake for 15 min or until toothpick comes out clean.

Cool & serve.

Optional decorating – mix 1/2 cup powder sugar with just enough milk to make icing like consistency.  Add desired food coloring. Using a pastry bag, pipe spider webs onto donuts.
