Whether you are going to a holiday cookie exchange or just need a festive treat to put out during the holidays, these mouthwatering healthy Cranberry Crunch Bars are perfect!! INGREDIENTS:
Nonstick Cooking Spray
CRUST
2 cups old fashioned rolled oats (we used 1 cup steel cut and 1 cup rolled oats)
2 Tbsp Coconut Sugar
1/4 cup + 1 Tbsp extra virgin organic coconut oil
FILLING
3 cups organic cranberries
1/4 cup Orange Juice
2 Tbsp Coconut Sugar
1 Tbsp Cornstarch
Cinnamon to taste (I forgot to add in, so I sprinkled on top before baking in the oven)
TOPPING
3 Tbsp Coconut Sugar
2 Tbsp all purpose flour
1/4 cup dry old fashioned rolled oats
1 Tbsp + 1 1/2 tsp extra virgin organic coconut oil
INSTRUCTIONS
To make crust:
- Preheat oven to 350
- Lightly coat 8X8 pan
- Place oats, sugar and coconut oil in a food processor, pulse until dough like mixture forms (add more oil if to dry)
- Spread oat mixture evenly into prepared pan. Press with fingers to evenly spread mixture
- Bake 15-20 min or until crust is slightly golden brown
- Remove from oven and set aside
To make filling:
- Heat cranberries, OJ, sugar, cornstarch and cinnamon (or save cinnamon to sprinkle over mixture before baking in oven) in medium saucepan over medium heat, stirring frequently for 5-7 minutes, using heat proof spoon to crush cranberries. Heat until cranberries turn saucy and mixture is bubbly
- Spread cranberry mixture evenly over crust & set aside
To make the topping:
- Combine oats, sugar, flour and coconut oil in a small bowl. Mix with clean hands until crumb like mixture form. Evenly spread onto cranberry mixture
Continue baking for 15-20 min or until cranberry mixture bubbles and top is lightly browned/baked. Remove from oven and cool completely. Slice into squares and enJOY!
