1 can (15oz) cannelloni beans, drained & rinsed) โฃ
3 large eggsโฃ
1/3 cup maple syrupโฃ
1/3 cup unsweetened cocoa powderโฃ
1 tsp baking sodaโฃ
3 tbsp coconut oil, meltedโฃ
1 tsp pure vanilla extract โฃ
Dark chocolate chipsโฃ
2-3 teaspoons melted coconut oilโฃ
Crushed organic candy canesโฃ
Holiday cupcake liners & toppersโฃ

Heat oven to 350โฃ
In a blender, blend first 7 ingredients (Beans thru extract) until smooth. โฃ
Pour batter into lightly greased silicone cake pop mold or mini muffin tinโฃ
Bake 17 min โฃ
Remove from oven, cool & pop out onto parchment paperโฃ
In microwave, melt 1 cup chocolate chips . . . I like to do in 20 second increments then stir & repeat until melted & smooth. Optional – Add in 2 teaspoons melted coconut oil to make dipping easier. Using a teaspoon, dip truffle into chocolate to coat. Remove and place on parchment paper. Repeat with remaining truffles. Sprinkle with crushed peppermint. Freeze for 15 min. Remove from freezer & place each truffle in a cupcake liner & top with festive topper. ๐๐ง๐๐๐โฃ
