Rich chocolate-y taste with a touch of peppermint! So so easy to make – these will become your go to recipe to bake for all your holiday guests! And shhh . . . no need to let anyone know they are healthy! (𝘙𝘦𝘤𝘪𝘱𝘦 𝘣𝘦𝘭𝘰𝘸 – 𝘣𝘦 𝘴𝘶𝘳𝘦 𝘵𝘰 𝘣𝘰𝘰𝘬𝘮𝘢𝘳𝘬 𝘣𝘤 𝘺𝘰𝘶 𝘸𝘪𝘭𝘭 𝘸𝘢𝘯𝘵 𝘵𝘰 𝘮𝘢𝘬𝘦 𝘵𝘩𝘦𝘴𝘦 𝘢𝘨𝘢𝘪𝘯 𝘢𝘨𝘢𝘪𝘯!)
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒
1 can (15oz) cannelloni beans, drained & rinsed)
3 large eggs
1/3 cup maple syrup
1/3 cup unsweetened cocoa powder
1 tsp baking soda
3 tbsp coconut oil, melted
1 tsp pure vanilla extract
Dark chocolate chips
2-3 teaspoons melted coconut oil
Crushed organic candy canes
Holiday cupcake liners & toppers
𝐈𝐍𝐒𝐓𝐑𝐔𝐂𝐓𝐈𝐎𝐍𝐒
Heat oven to 350
In a blender, blend first 7 ingredients (Beans thru extract) until smooth.
Pour batter into lightly greased silicone cake pop mold or mini muffin tin
Bake 17 min
Remove from oven, cool & pop out onto parchment paper
In microwave, melt 1 cup chocolate chips . . . I like to do in 20 second increments then stir & repeat until melted & smooth. Optional – Add in 2 teaspoons melted coconut oil to make dipping easier. Using a teaspoon, dip truffle into chocolate to coat. Remove and place on parchment paper. Repeat with remaining truffles. Sprinkle with crushed peppermint. Freeze for 15 min. Remove from freezer & place each truffle in a cupcake liner & top with festive topper. 𝐞𝐧𝐉💚𝐘
