
𝐇𝐨𝐩𝐩𝐢𝐧𝐠 𝐛𝐲 𝐭𝐨 𝐝𝐞𝐥𝐢𝐯𝐞𝐫 𝐲𝐨𝐮 𝐭𝐡𝐞 𝐂𝐚𝐫𝐫𝐨𝐭 🥕 𝐂𝐮𝐩𝐜𝐚𝐤𝐞 𝐫𝐞𝐜𝐢𝐩𝐞!
This recipe can also be made in loaf pans but either way your family will nibble them up! Click the save button for future reference and tag another mom who could use a yummy way to get her kids to eat more carrots!
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒
2 cups flour – I use @bobsredmill
2 tsp baking powder
1 1/2 tsp baking soda
3 tsp cinnamon
2 cups sugar (try using less sugar or coconut sugar)
1 1/2 cups unsweetened apple sauce
4 eggs
3 cups grated organic raw carrots
1 can (8 1/2 oz) crushed pineapple (drained)
𝐂𝐑𝐄𝐀𝐌 𝐂𝐇𝐄𝐄𝐒𝐄 𝐈𝐂𝐈𝐍𝐆
1 package reduced fat cream cheese
1 box (16oz) powdered sugar
Milk – start with 3 tablespoons & add as needed for desired consistency
Optional – shredded organic coconut
𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒
Heat oven to 350
Add all ingredients in a bowl and stir to combine throughly. Pour into TWO 12 cup lined cupcake pans. Bake 35 min. Remove from oven and cool.
In a bowl, beat cream cheese & powdered sugar while gradually adding milk. Spread on cupcakes and add a fun cupcake topper of choice!
