Stay at home orders and ZOOM school for 3 kids has me feeling like I am running a 24/7 diner but that doesn’t mean we can’t try to make it fun…and get the kid involved!

Since all the kids have different “snack time” mini pizza pies are easy because you can serve them warm or room temp.  And some teens might claim that cold pizza is the best meal- HA!

 

 

 

 

 

Ingredients:

Pie Crust

Tomato Sauce

Shredded Mozzarella Cheese

Optional toppings (diced peppers, roasted eggplant, roasted tomatoes, fresh basil…the toppings are endless)

 

Directions

Take pie crust out of refrigerator approx 20 min before using.  Roll onto Silpat or cutting board.  Using a ravioli cutter, biscuit cutter or any circle cookie cutter, cut circles.  Lay circles into tart pan and gently press down to form a cup.  Spoon tomato sauce into each cup, filling approx 3/4 way.  Top with shredded mozzarella cheese and optional toppings.  Bake at 400 for approx 15 min.  (Cooking time & temp may vary on pie crust brand)

Using a spoon, scoop pizza pie cups onto platter, serve warm or leave room temp for kids to enjoy during their snack time.  enJOY!!
