Because everything shaped liked a DONUT tastes good!
Making homemade donuts is super simple and healthy!! These are great for a quick breakfast on the go or after school snack. Or, make up a batch and bring them to your children’s next soccer game!
INGREDIENTS
Donuts:
1/4 cup + 2 tablespoons almond flour
1/4 + 2 tablespoons cocnut flour
OR use 1/2 cup + 4 tablespoons King Arthur Flour (I used do to allergies)
4 eggs
2 tablespoons raw honey
1/4 organic butter
1 cup mashed bananas
3/4 teaspoon baking soda
1 teaspoon vanilla extract
Chocolate Glaze:
1/4 cup + 2 tablespoons Cacao Powder
2 tablespoons honey
1.5 tablespoons coconut oil
OR
White Icing:
1/4 cup Organic Powdered Sugar
Scant Fresh OJ or almond milk or coconut milk
INSTRUCTIONS:
Preheat oven to 350 degrees.
In a bowl combine the mashed banana, eggs, honey, butter & vanilla and with a mixer, beat to combine until smooth
Add in the flour(s) & baking soda & mix until well combined (the batter may be slightly clumpy)
Generously grease 2 non-stick donut pans (6 donuts each) with coconut oil and add in the batter to fill each mold – I used and ice-cream scoop for easy filling
Bake the donuts for 10-12 minutes until just beginning to brown on top
Remove from the oven and leave to cool for 20-30 minutes
Once cooled, remove from the pan and place on a plate
Prepare the chocolate drizzle by melting the coconut oil and honey in a small sauce pan, then transfer to a small bowl and stir in the cacao powder until smooth
Drizzle over donuts, using a pastry knife to spread
OR mix 1/2 cup organic powdered sugar with scant 1/4 cup of OJ or Almond Milk or Coconut Milk – stir to icing like consistency.
Spread on donuts using a pastry knife
enJOY!
Store donuts – if there are any left 🙂 – in refrigerator
