This delicious easy to make Gingerbread Loaf is easy to make and is the perfect touch for Christmas morning or to give as gifts to neighbors.

INGREDIENTS

2 cups all purpose flour

1 tsp baking soda

1 1/2 rsp ground ginger

1 1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground cloves

3/4 cup coconut sugar OR brown sugar

1/2 cup unsweetened applesauce

1/3 cup molasses

3 eggs

1 tsp pure vanilla extract

1/4 cup hot water

GLAZE

1 1/2 cups powdered sugar

3 tablespoons milk

 

DIRECTIONS

Preheat oven to 325 degrees

Grease a 9 by 5 loaf pan or 4 mini loaf pans

In a small bowl whisk flour, baking soda & spices
In a large bowl mix sugar, applesauce, molasses, eggs & vanilla

add dry ingredients to wet ingredients and mix until blended  Add hot water & mix until blended.  (The shortcut cook in me skipped the small bowl and just added the dry ingredients to the wet and gave it a good stir)

Pour batter into loaf pan  Bake 40-50 min or until a toothpick inserted in center comes out clean.  If using smaller loaf pans, bake 30 min, check and continue to bake until toothpick comes out clean.

While gingerbread cools, in a medium bowl mix powdered sugar, vanilla extract & milk together … you can add a little more milk depending on consistency you prefer.  Less milk creates more of an icing and more milk creates a glaze.

Pour glaze over gingerbread.  Slice & enjoy.
