A family favorite, especially at Christmas, these ricotta cookies are easy to make and great to get kids to help with too!

You can add sprinkles or food coloring if desired

INGREDIENTS

2 cups sugar

2 sticks unsalted butter softened (1 cup)

1 15oz container part skim ricotta

2 tsp pure vanilla extract

2 large eggs

4 cups all purpose flour

2 TBSP baking powder

 

DIRECTIONS

Pre-heat oven to 350

In a stand mixer (or use hand held) beat sugar + butter until light & fluffy

On medium speed, beat in ricotta, vanilla & eggs until blended

Reduce speed to low and add flour and baking powder. Mix until dough forms.

Using a small ice cream scooper or 2 teaspoons, drop balls of dough onto cookie sheet lined with parchment paper

Bake 15 minutes (or until light golden color)

ICING

1 1/2 cups powdered sugar

3 TBSP OJ or milk

1 TSP vanilla extract

DIRECTIONS

Whisk all ingredients together, adding more OJ or milk as needed to desired icing consistency.  Pour or spread over cookies.
