HEALTHIER EGGPLANT PARMESAN 🍆🍷

INGREDIENTS

( can easily be doubled, tripled …)

1 Eggplant – peeled and sliced almost to bottom but not all the way through
• 2 thinly sliced vine ripe tomatoes
• 1 cup jarred tomato sauce of choice (look for one with minimal ingredients)
• 1/2 cup Panko bread crumbs (you can sub Italian bread crumbs or mix 1:1)
• fresh mozzarella

DIRECTIONS

Preheat oven to 375.
In a glass baking dish, cover bottom with 1/4 cup tomato sauce.
Layer in eggplant and then alternate slices of tomato between eggplant slices
Sprinkle with sea salt
Top with remaining tomato sauce
Cover with foil and bake 50 min.
Remove foil & bake another 10 min
Remove from oven and turn oven to broil
Top eggplant & tomatoes with breadcrumbs & fresh mozzarella
Return to oven and broil approx 2 min or just until bread crumbs are browned and cheese starts to melt.
I was out of basil but you can top with fresh basil to help add another plant to your plate.

Serve with salad instead of pasta.
Optional: serve with grilled chicken sausage
