These cookies are perfect for lunchboxes & team sports because they are gluten-free and nut free yet the taste will win your fans over!  Plus oats are a fiber filled carb which will give you energy. And these cookies are super simple to make too!!

INGREDIENTS

1 cup GF Oat Flour
1/2 tsp baking soda
1/2 cup unsalted butter, softened
1/3 cup granulated sugar
2/3 cup brown sugar
2 tsp pure vanilla extract
1 large egg
1 1/2 cups GF rolled oats
1 cup milk or dark chocolate chips
1 – 2 tsp coconut oil

DIRECTIONS

In a medium bowl, whisk flour & baking soda
In a large bowl, beat butter with sugars until
light & fluffy
Add flour mixture & mix to combine
Reduce speed to low and add vanilla & egg
and beat until mixed
Stir in oats & chocolate chips
Chill for 1 hour
Preheat oven to 375 degrees
Line a cookie sheet with parchment paper
Using an ice cream scooper or 2 teaspoon, drop a ball of dough, spacing about 2 inches, on to prepared cookie sheet
Bake 8-10 minutes or until golden
Remove from oven, let cool for 2 minutes and transfer to a cookie rack. enJOY!!
