The holidays don’t have to mean weight gain! These one bowl easy to make cinnamon banana muffins make it easier to stay on track with your weight loss.

INGREDIENTS

BANANA MUFFIN

3 ripe bananas

4 tbsp melted unsalted butter

3/4 cup pure maple syrup

1 cup unsweetened oat milk

1 tsp vanilla extract

1 1/2 tsp baking powder

1 teaspoon baking soda

1 1/2 tsp cinnamon

1 1/2 cup all purpose flour (regular or gluten free)

1 cup old fashioned rolled oats

DIRECTIONS

Preheat oven to 375

Grease muffin pan

in a large mixing bowl, mash bananas with a fork

Add butter, syrup, oat milk, vanilla, cinnamon, baking powder and baking soda. Add flour and oats and stir to combine.
Divide batter evenly among muffin cups

Bake for 30 min or until a toothpick inserted comes out clean

OPTIONAL ICING:
1/4 cup cream cheese
1/4 cups powdered sugar
Plant based milk

In a mixer, beat cream cheese and powdered sugar. Add a dash of milk, beating after each addition until desired consistency.
Spoon into a ziplock bag & snip the corner. Pipe onto muffin. Add eyeball sprinkles if desired.
