
Pumpkin Munchkins
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒: 𝘮𝘢𝘬𝘦𝘴 𝟸𝟺 munchkins
• 4 tbsp softened butter
• 2/3 cup granulated sugar or coconut sugar
• 4 tbsp canola oil or coconut oil (melted)
• 2 eggs
• 2/3 cup milk (regular, coconut or almond)
• 2/3 cup pumpkin purée
• 1 tsp vanilla extract
• 2 cups all purpose flour
• 2 tsp ground cinnamon
• 3/4 tsp ground nutmeg
• 1/2 tsp ground cloves
• 1/2 tsp baking powder
• 1/2 tsp baking soda
Munchkin 𝐜𝐨𝐚𝐭𝐢𝐧𝐠 • approx 3 tbls melted butter or coconut oil • mix 1 tsp sugar (reg or coconut) & 1 tsp cinnamon in a bowl
𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:
Heat oven to 350. Bear butter & sugar. Add in oil, eggs, pumpkin & vanilla. With mix on med speed, add in flour, spices & baking powder & baking soda. Mix to combine. Using an ice cream scoop or 2 teaspoons, spoon batter into greased cake pop pan or greased mini muffin pan. Bake for 15 min.
Remove from oven. Brush munchkins with melted butter and roll in cinnamon sugar mixture.
