
This Pickle-Wich Burger was a hit with the family! A fun twist on a Big Mac tasting burger, it is super easy, and fun, to make! For those of you who know me, you know that I am a bit of an eyeball cook but most everything I make can’t really be screwed up! And, should you have any questions, I am always happy to answer them! What you need:
Cookie Sheet lined with parchment paper
Shredded Mozzerella ( I do not recommend reduced fat cheese bc it does not melt well)
Sliced Dill Pickles
Cooked Ground Beef
Arugula or salad greens
Sliced yellow onion, sautéed
Big Mac Dressing
Dressing Ingredients (easy to double, triple, eyeball & season to taste)
2 tbsp olive oil mayo or plain Greek yogurt
2 tbsp all natural ketchup
1 tsp onion powder
1/2 tsp garlic powder
1 tbsp sweet pickle relish
1/2 tsp yellow mustard
1/4 tsp apple cider vinegar
1/4 tsp ground paprika
Add all ingredients to a mason jar, cover with a lid and shake.
Directions
Heat oven to 350 degrees
On the parchment paper lined cookie sheet, take the shredded cheese and make rectangles … you want a thin layer of cheese and long enough to roll (approx 8″ X 4″)
Make a single layer of the sliced pickles on top of cheese
Bake at 350 for approx. 8 – 10 min or until cheese is melted and golden brown
Remove from oven and set aside
Make salad dressing and set aside (can be meal prepped ahead of time)
Cook ground beef and sauté onions (can be meal prepped ahead of time)
Spread a layer of salad dressing over the pickle-wich
Top with arugula / salad greens, ground beef and onions
Roll into a sandwich wrap and use a bamboo skewer to hold together
Serve and enJOY!
