The most moist, delicious and easiest one bowl zucchini bread you will ever make.  You will want to save this recipe for your weekly snack prep!

INGREDIENTS

2 cups all-purpose flour

1 ½ cups granulated sugar

2 teaspoons baking soda

2 tablespoon cinnamon

3 large eggs

2 cups grated zucchini – I used a food processor but you can use a grater

¾ cup canola oil or applesauce

1 tablespoon vanilla extract

DIRECTIONS

Preheat the oven to 350˚F.

Line two 8×4-inch loaf pans with parchment paper

In a large bowl, whisk the eggs. Add the grated zucchini, oil, and vanilla. Whisk well to combine.

Add flour, sugar, baking soda and cinnamon to the zucchini mixture. Gently stir just until combined.

Divide the batter evenly over the prepared pans and bake for 50-60 minutes or until a toothpick comes out clean.
