These cookie bars are so easy to make, are gluten free and won’t wreck havoc on your waistline!!

INGREDIENTS

• 2 cups oat flour

•½ teaspoon baking powder

•¼ cup maple syrup 

•¼ cup applesauce 

•1 teaspoons vanilla extract 

ICING

3 tablespoons unsalted butter, room temperature

1 cup powdered sugar

1/4 cup plant based milk

DIRECTIONS:

1.    Preheat your oven to 350 degrees Fahrenheit. Line 3 mini loaf pans with parchment paper or spray with cooking spray (double recipe if using regular size loaf pan)

2.    In a mixing bowl add in the applesauce and maple syrup. Stir until combined.

3.    Add in the oat flour and baking powder & mix until a dough forms.

4.    Transfer to the loaf pans, pressing in

5.     Bake for 15 minutes

6.     Cool completely

In a stand mixer, beat butter

Add in powdered sugar and continue mixing while slowly adding milk. Add more milk until desired icing consistency

Remove bars from loaf pan & spread icing evenly across bars. Sprinkle with sprinkles.
